چکیده

شناخت و ارزیابی صفات کیفی میوه هلو از نظر برنامه‌های به‌نژادی و حفظ ژرم‌پلاسم بسیار با اهمیت است. برای این منظور، بررسی و مقایسه خواص کیفی و بیوشیمیایی میوه 18 ژنوتیپ و رقم هلوی موجود در استان آذربایجان‌شرقی در قالب طرح بلوک‌های کامل تصادفی با سه تکرار انجام گرفت. صفات مختلفی از قبیل سفتی بافت میوه، مواد جامد محلول (TSS)، pH آب میوه، اسیدیته قابل‌تیتراسیون (TA)، ویتامین ث و محتوای فنل کل و ظرفیت آنتی‌اکسیدانی، فلاونوئید کل و آنتوسیانین کل در دو بخش پوست و گوشت مورد ارزیابی قرار گرفت. همچنین به‌منظور تعیین ارتباط بین صفات، همبستگی ساده بین صفات نیز محاسبه گردید. نتایج حاصله نشان داد که اثر ژنوتیپ و رقم روی بیشتر صفات مورد مطالعه در سطح احتمال 1 درصد معنی‌دار بود. صفات بیوشیمیایی مورد بررسی در همه ارقام و ژنوتیپ‌های ارزیابی‌شده در بخش پوست بیشتر از گوشت بود. همچنین نتایج نشان داد که رقم هلوی حامدی دارای بیشترین مقدار آنتوسیانین کل و فلاونوئید کل بود و ارقامی مانند انجیری موری، انجیری زعفرانی خلیلی دارای بیشترین محتوی ویتامین ث بوده، ظرفیت آنتی‌اکسیدانی و محتوای فنل کل بودند. نتایج همبستگی نشان داد که محتوی ویتامین ث با ظرفیت آنتی‌اکسیدانی، فنل کل و فلاونوئید کل گوشت و پوست همبستگی معنی‌داری نداشت، درحالی‌که همبستگی مثبت و معنی‌داری بین فنل کل و ظرفیت آنتی‌اکسیدانی مشاهده گردید. به‌طور کلی با توجه به نتایج به‌دست آمده ارقام با ترکیبات بیوشیمیایی و آنتی‌اکسیدانی بالا می‌تواند در برنامه‌های اصلاحی مورد استفاده قرار گیرند.

Recognition and evaluation of qualitative traits of peach fruit is an important step in breeding programs and preservation of germplasm. For this purpose, the qualitative and biochemical properties of 18 peach cultivars and genotypes in East Azarbayjan province were investigated in a randomized complete block design with three replications. Some pomological traits like firmness, TSS, pH, TA, vitamin C, total phenolic content, antioxidant capacity, total flavonoid and total anthocyanin of peel and flesh were evaluated.
