In cold-sensitive products, low temperature leads to chilling injury. Under chilling stress conditions, the production of reactive oxygen species increases and causes oxidative stress. Plants have developed an efficient antioxidant defense system to prevent the accumulation and elimination of reactive oxygen species. In this study, with the aim of investigating the antioxidant activity of melons under low temperature conditions, seven melon genotypes including 4 parents (“Abadan”, “Khatouni”, “Dudaim”, “Japan”) and 3 hybrids (“Khatouni×Abadan”, “Dudaim×Khatoni”, “Japan × Khatouni”) in the year 2018 and 2019 were cultivated in Horticultural science Research Center. After harvesting, the fruits were transferred to the cold room of Horticultural Science Department and kept at three temperatures (1, 4 and 13° C) for thirty days. The results of the research showed that the firmness of the tissue and the total soluble solids were higher in the samples of “Japan” and “Japan×Khatouni” compared to other melons. Also, in these melons, the chilling index was low after thirty days at temperatures of 1 and 4°C. The lowest firmness and soluble solids and the highest chilling index and malondialdehyde content were seen in “Dudaim ×Khatouni” and “Khatouni × Abadan”. The amount of activity of antioxidant enzymes (catalase, peroxidase and superoxide dismutase) was higher in melons that had a lower chilling index. The highest activity of antioxidant enzymes was seen in “Japan” and “Japan×Khatouni”. It seems that the elevated levels of catalase, peroxidase, and superoxide dismutase enzymes contribute to improving cold resistance in this samples of melons.
