اثر محلول‌پاشی پیش از برداشت آهن سکوسترین و سالیسیلیک اسید بر‎ ‎برخی ویژگی‌های کیفی هلو ‏رقم زعفرانی در طول دوره انبارمانی ‏

چکیده

به‌منظور بررسی اثر سالیسیلیک اسید و آهن بر خصوصیات کیفی میوه هلو رقم زعفرانی، آزمایشی به صورت فاکتوریل در قالب طرح بلوک­های کامل تصادفی در چهار تکرار انجام شد. سالیسیلیک اسید در چهار غلظت 0، 1، 2 و 4 میلی­مولار و آهن سکوسترین در سه غلظت 0، 5 و 10 میلی­گرم بر لیتر و در دو مرحله (40 و 80 روز پس از تمام گل) روی درختان هلو رقم زعفرانی محلول‌پاشی شدند. پس از برداشت میوه­ها، شاخص­هایی مانند مواد جامد محلول، اسید قابل عیارسنجی، pH، سفتی میوه، درصد کاهش وزن (نسبت به روز صفر)، ظرفیت آنتی­اکسیدانی، تولید اتیلن و نشت یونی در چهار دوره با فواصل زمانی 15 روزه (روزهای صفر، 20، 40 و 60) مورد بررسی قرار گرفتند. نتایج نشان داد اعمال تیمارها موجب جلوگیری از کاهش وزن، نشت یون­ها و تولید اتیلن و همچنین باعث حفظ اسید قابل عیارسنجی، مواد جامد محلول و ظرفیت آنتی­اکسیدانی میوه­ها شد. از بین غلظت­های مورد استفاده، میوه­های تیمارشده با سالیسیلیک اسید (غلظت 4 میلی­مولار) و آهن سکوسترین (غلظت 10 میلی­گرم بر لیتر) موجب حفظ ظرفیت آنتی­اکسیدانی و جلوگیری از تولید اتیلن، کاهش وزن و نشت یونی شدند. میوه­های تیمارشده، در نهایت تا روز 40اُم کیفیت خود را حفظ کرده و در روز 60اُم هیچ­کدام از میوه­ها بازارپسندی نداشتند.

چکیده [English]

To investigate the effect of salicylic acid and iron on peach fruit (Prunus persica L. cv. Zaferani) quality, a factorial experiment in a randomized complete block design with four replications was conducted. Salicylic acid solution at four levels 0, 1, 2 and 4 mM and iron sequestrine in concentrations of 0, 5 and 10 mg/L were prepared and sprayed on peach trees in two stages (40 and 80 days after full bloom). After fruits harvesting, total soluble solids, titratable acidity, pH, firmness, fruit weight loss, antioxidant capacity, ethylene production and electrolyte leakage were measured. The results showed that the treatments compare to controls were prevented weight loss, electrolyte leakage and ethylene production and maintain titratable acids, soluble solids content and antioxidant capacity of fruits. Fruit treated with salicylic acid 4 mM and iron 10 mgl-1 were maintained antioxidant capacity and prevented ethylene production, weight loss and electrolyte leakage. The treated fruits eventually retained their quality until the 40th day and on the 60th day any fruits haven't marketable quality.
