تأثیر دو روش پوشاندن با کاغذ مومی در مهار آسیب‌های ناشی از سرمازدگی میوۀ انار ’ملس ساوه‘ در سردخانه

چکیده

یکی از مهم‌ترین عامل‌های محدود‌کنندۀ انبارداری میوۀ انار تنش سرمازدگی است. از نشانه‌های قابل‌مشاهده می‌توان به قهوه‌ای شدن پوست و رنگ‌پریدگی نارمیانبر (آریل)‌ها اشاره کرد. در طول سال‌های گذشته تحقیقات پرشماری به‌منظور بررسی و مهار این پدیده صورت گرفته است. در این پژوهش تأثیر دو روش پوشاندن میوه با کاغذ مومی در مهار آسیب‌های ناشی از تنش سرمازدگی نسبت به شاهد مقایسه و ارزیابی شده است. روش کار به این صورت بود که شماری از میوه‌ها درون پوشالی از کاغذ مومی قرار گرفته و شمار دیگری از میوه‌ها درون صفحه‌های کاغذ مومی پیچیده شدند. میوه‌های شاهد هیچ پوششی دریافت نکردند. میوه‌ها به انباری با دمای 5 درجۀ‌ سلسیوس و رطوبت نسبی 85درصد منتقل شدند. نمونه‌برداری به مدت 12 هفته و هر سه ‌هفته یک‌بار انجام شد. ارزیابی‌های ظاهری نشان داد، پوشاندن میوه‌ها باعث کاهش معنی‌دار قهوه‌ای شدن پوست و حفظ درخشندگی نارمیانبر‌ها می‌شود. همچنین مشخص شد که میوه‌های پوشانده‌شده نشت یونی و پراکسیدهیدروژن کمتری نسبت به میوه‌های شاهد داشته‌اند. تحلیل نتایج به‌دست‌آمده نشان می‌دهد، هر دو روش پوشاندن قابلیت مهار آسیب‌های ناشی از تنش سرمازدگی در بافت‌های مختلف میوۀ انار را داشته‌اند. بنابراین هر دو روش پوشاندن قابلیت تجاری‌سازی را دارند، با این حال پیچیدن میوه‌ها درون صفحه‌های کاغذی به دلیل کارایی بهتر و نیاز به میزان کمتر کاغذ در اولویت قرار می‌گیرد.

چکیده [English]

One of the most important limiting factors for Pomegranate fruit storing is chilling stress. Visible symptoms include fruit husk browning and arils paleness. During the recent years some researches have been done to study and inhibit the phenomenon. In this research the efficacy of two fruit covering methods with waxed paper to inhibit chilling injury were compared with controls. Some of the fruits embedded in the paper strips and some others wrapped in the paper sheets. Uncovered fruits were as controls. Fruits were transferred to a cold storage with 5oC and 85% RH. Samplings were carried out in three weeks intervals for 12 weeks. Visual evaluations showed that fruits covering reduced husk browning significantly and maintained arils color brilliance. It was also found that covered fruits had much less ion leakage and hydrogen peroxide. Total analysis of the results showed that both covering methods had potential to control chilling damages in fruits different tissues. Therefore, both covering methods which are environmentally friendly are suitable for commercialization; however, wrapping the fruits in the paper sheets is placed in priority because of the better performance and lesser paper consumption.
