تأثیر پوشش‌های مختلف پس از برداشت بر میزان رنگ و آنتوسیانین انار ملس ساوه در دورة انبارداری سرد

چکیده

رنگ پوست و بذر پوشینة (آریل) انار (بخش خوراکی) از شاخص‌هایی است که کیفیت میوه و انتخاب مصرف‌کننده را تحت تأثیر قرار می‌دهد. در این پژوهش تأثیر سه نوع پوشش (کیتوزان 1 و 2 درصد، واکس ژداسول و واکس بریتکس) بر شاخص‌های رنگ آریل و آنتوسیانین‌های موجود در آب انار رقم ملس ساوه در دورة 120 روز انبارداری در دمای 5/4 درجۀ سلسیوس بررسی شد. شاخص‌های یادشده پیش از تیمار، در 40، 80 و 120 روز پس از آغاز انبارداری نیز اندازه‌گیری شدند. نتایج وجود مشتقات مونو و دی‌گلوکوزیدی دلفینیدین، سیانیدین و پلارگونیدین را در هنگام برداشت میوه نشان داد. بنابراین نتایج، نوع آنتوسیانین تحت تأثیر نوع تیمار و زمان انبارداری قرار نگرفت. همچنین در چهل روز نخست انبارداری شاخص روشنایی (L*) و خلوص رنگ (کروما) کاهش یافت، درحالی‌که شاخص زاویۀ هیو و آنتوسیانین کل در این مدت افزایش یافت که نشان‌دهندۀ ادامۀ ساخت (سنتز) آنتوسیانین در فرآیند دوران پس از برداشت میوه است. پس از آن تا پایان دورۀ انبارداری به‌تدریج شاخص L* و خلوص رنگ افزایش و زاویۀ هیو و میزان آنتوسیانین کل کاهش یافت، به‌طوری‌که میزان کاهش در میوه‌های تیمارشده کمتر از شاهد بود. نتایج نشان داد آنتوسیانین‌های دی‌گلوکوزیدی پایدارتر از انواع مونو‌گلوکوزیدی است. بنا بر نتایج به‌دست‌آمده از این پژوهش در مقایسه بین پوشش‌‌‌‌‌‌‎‎های مورد استفاده، تیمار واکس ژداسول و کیتوزان 2 درصد در حفظ شاخص‌های رنگ بذر پوشینه و میزان آنتوسیانین میوۀ انار مؤثرتر بودند.

Pomegranate aril and peel fruit colour are important factors affect fruit quality and consumer preference. In this study, the effects of three coating treatments (1 and 2% chitosan, Xedasol M14 and Britex Ti wax) investigated on the aril colour parameters and anthocyanins content of pomegranate fruit cv. Malas-e-Saveh during 120 days storage at 4.5˚C. Above traits were measured at harvest time and 40, 80 and 120 days after storage. The results appeared diglucosides and –mono glucosides derivatives of cyanidin, delphinidin and pelargonidin in the pomegranate juice at harvest time. The profile of individual anthocyanins pomegranate juice was not affected by coating treatments and storage time. Up to 40 days storage, L* and chroma parameters reduced while in this time hue angle and total anthocyanin content increased. It is reflected that the anthocyanin synthesis continues in harvested fruit. Then, up to the end of storage the L* and chroma parameters gradually reduced and hue angle and total anthocyanin content increased that the level of reducing in the treated fruits were lower than that untreated fruits. The results showed that the diglucoside anthocyanins were more stable than the monoglucosides. Overall, xedasol and 2% chitosan coating treatments were more effective in maintaining of the colour parameters and anthocyanin content.
