The purpose of this study was to investigate the changes of secondary metabolites and phenylalanine amonialyase enzyme (PAL) activity in two favorable and unfavorable conditions for the occurrence of pomegranate aril paleness to identify of the most sensitive stage/stages of fruit maturity and then fundamental management of orchards to reduce the damage of the mentioned complication. The stages of pomegranate fruit maturity included: fruit emergence (1), Hazelnut ( 2), fruit growth ( 3) and full ripening (4). Under unfavorable conditions for the occurrence of the paleness complication a significant negative correlation was observed between the phenol content (TPC) and flavonoid (TFC) (r= -0.317*); Thus, TPC and TFC showed an increasing and decreasing trend (stage 1 to 3) and then a decreasing and increasing trend (stage 3 to 4), respectively. Under favorable conditions,TPC and TFC showed a regular downward trend (r= 0.700**). The content of anthocyanin (Cyd) increased from stage 1 to 3 in both conditions; However, after the fruit growth stage (stage 3), a significant change in Cyd content was observed in the both conditions. The activity of PAL enzyme increased in both conditions up to stage 3 and then the activity of this enzyme decreased in both conditions. This result strengthened the hypothesis of the cross-sectional participation of PAL enzyme in the anthocyanin biosynthesis of pomegranate aril. In general, under favorable conditions for the occurrence of aril paleness, especially heat stress , the most sensitive stage of fruit maturation is between the stage of fruit growth and full ripening.
